Using the latest version of iPhoto, there still isn’t an option to turn of syncing for a specific device, namely the iPhone. While you can turn off auto-lauching globally, this of course prevents iPhoto from launching when a digital camera is attached. For some, this is mildly annoying and luckily Matt Radel of 37signals has created an AppleScript that prevents iPhoto from launching (http://www.37signals.com/svn/posts/873-tip-prevent-iphoto-from-opening-when-you-plug-in-your-iphone) when docking your iPhone.
